Tsukuttemita: Creamy Carrot Soup

Next monday I'll have two wisdom teeth removed. I am a bit scared of that. But I will buy me lots of icecream to cool my mouth afterwards : )
And I was thinking about taking the easy way and just eating soups then.

So yesterday I made this delicious Carrot-Coconut milk-Soup (see below for the recipe):




I froze half of it, so I can eat it next week if I am unable to chew. Soups are great, because they're
easy to make and a good healthy snack when you don't have much time (just make a bit more, store and unfreeze when needed). 

This one is really simple:

Cut 200 g of carrots  and one onion into small pieces and crush one half of a garlic clove.

 


Stew everything in a pot with approximately one tablespoon of oil. Then add 300 ml broth , 100 ml coconut milk and 50 ml orange juice and cook for 15 to 20 minutes (use the lid).
Finally purée the soup and season with salt, curry, nutmeg (not too much) and a tiny bit of cinamon.
For the decoration you can use parsley as I did or cress.
